Ingredients
- 1 Litre Apple Juice
- 1 Litre White Grape Juice
- 800g Canned Peaches
- 400g Dried Apricots
- 50g Honey
- 525g Granulated Sugar
- 300g Sugar for Sweetening
- Sufficient Pectolytic Enzyme
- Gervin No. 6 Yeast
- 1g / ¼ Teaspoon Yeast Nutrient
- Water to 4.5 Litres
Method
This wine is somewhat lighter in style. It has a medium body and an acid level of 7g per litre. Do keep this wine in bottle for a year or two before being tempted to drink it all. It really does match up with the commercial equivalent and is as good as all but the very best that this region offers.
