Ingredients
- 1 Litre Apple Juice
- 1 Litre White Grape Juice
- 900g Rhubarb
- 200g Dried Apricots
- 225g Ripe Banana (Pulp)#
- 100g Honey
- 500g Granulated Sugar
- 340g Sugar for Sweetening
- Sufficient Pectolytic Enzyme
- Gervin No. 3 Yeast
- 1g / ¼ Teaspoon Yeast Nutrient
- Water to 4.5 Litres
Method
With this recipe, we are moving to the Bordeaux region and attempting to imitate the beautiful, sweet wines. The Barsac style is the lighter of the two and with this recipe the wine comes out with the acidity perhaps a little on the high side at 8-9g per litre. This is fine though.
