- 1 Litre White Grape Juice
- 1 Litre Apple Juice
- 200ml Red Grape Concentrate
- 480g Granulated Sugar
- Sufficient Pectolytic Enzyme
- 2-3g / ½ Teaspoon Yeast Nutrient
- 5g Bentonite
- Gervin No. 9 Yeast
- Water to 4.5 Litres
- 225g Sugar For Sweetening
This recipe uses ingredients that can be obtained easily at any time of the year. Although the body is still fairly light, the wine will be fruity and acid enough to stand sweetening up to a medium sweetness.
The addition to the must of bentonite is recommended, since it ensures smooth fermentation and helps the wine to clear quickly. The bentonite also takes out any residual yeast protein and prevents deposits in the bottle during storage.
