Rose Style 4 – Medium-Sweet Red Wine

Ingredients

• 1 Litre Apple Juice
• 1 Litre White Grape Juice
• 800g Canned Peaches
• 225g Blackcurrants
• 100g Banana Flesh (Pulp)
• 625g Granulated Sugar
• Sufficient Pectolytic Enzyme
• Gervin No. 9 Yeast
• Water to 4.5 Litres
• 225g Sugar For Sweetening

Method

This wine has a little more back bone because of the canned peaches and bananas and the alcohol level is quite high.  It has excellent balance of acidity, body, flavour and sweetness and whilst it can be drunk with pleasure quite soon after the fermentation is over, it will improve in the bottle if kept for a few months.  This wine will appeal to drinkers with a sweeter palette and can be classed as a social wine by those folk who do not want a blockbuster!
