Ingredients
- 500ml Red Grape Concentrate
- 500ml Apple Juice
- 100g Bananas Ripe (Pulp)
- 450g Pears
- 500g Granulated Sugar
- Sufficient Pectolytic Enzyme
- Gervin No. 1 Yeast
- 2-3g / ½ Teaspoon Yeast Nutrient
- Water to 4.5 Litres
Method
This recipe gives a very pleasant, easy drinking wine in the style of a relatively inexpensive Bordeaux wine, or perhaps one from the regions to the east of Bordeaux such as Bergerac or Buzet. All the ingredients are normally available throughout the year, but if you should have difficulty finding fresh pears then a small can of pears will do nicely. The No. 1 yeast suits this recipe very nicely, since it ferments quickly and drops clear once the fermentation is complete. The wine should have an alcohol content of around 12% and a light to medium bodyweight.
